Thai chicken noodle soup

This is a recipe me and my best friend has invented ourselves with inspiration from Thailand. My friend really loved the food there and when she came back from her vacation   she was eager to share it with me, so we experimented and the result was this! 

 Ingredients: (for 2)
2 chickenbreast fillets
40 g egg noodles
1 red capsicum
1 big carrot
sweet peas
Sweet chili sauce
cayenne pepper
paprika powder
salt and pepper
1 chicken stock cube
8 dl water
 

 Step 1: cut the chicken into small pieces












Step 2: fry the chicken in a pan with some butter
 Step 3: rins the vegetables and cut the capsicum and carrot into small pieces.
 Step 4: add the capsicum to the chicken and fry it untill the capsicum is completely cooked.
 Step 5: measure up 8 dl water and boil the egg noodles together with the chicken stock cube.
 Step 6: add the chicken, capsicum, carrot and sweet peas
 Step 7: add all the spices and the sweet chili sauce. Season after your own flavor.

tip: be careful with the cayenne pepper, it's very strong!
 Step 8: cut up some bread
Step 9: your dish is now done, enjoy your meal! :)














My rate of the recipe:

time: it takes approximately 1 hour to prepare and cook. But it's definitely worth the time. 4 stars!

difficulty: even though it involves a lot of steps it's quite simple and it's very fun to cook! 5 stars!

taste: it has a great spicy taste mixed with a sweet flavour from the chili sauce and the vegetables. you can also add other vegetables to vary the dish. 5 stars!

Mexican Quesadilla

Ingredients:  (1 person)
1 tortilla bread
grated cheese
sliced ham
hot taco sauce
butter








Step 1. Put some butter in the frying pan, but the stove on medium heat
 
Step 2. Prepare the tortilla by spreading the grated cheese and ham on half of the bread. Spread on some taco sauce on top.

Step 3. Put the tortilla in the pan and fry carefully, they burn easily otherwise.

Step 4. When the cheese is melted fold the tortilla in half and you quesadilla is ready to be served.


My rate of the recipe:
 
time: super quick, it takes less than 5 minutes!  5 stars!

difficulty: very basic and easy. 5 stars!
 
taste: this example had a great spicy taste, but you can add whatever you like to make it suit your taste and to very the dish. A great snack/lunch or even an appetizer. 5 stars!

Chilean empanadas

Today I made Chilean empanadas for me, my sister and her boyfriend. Since we all love Tacos I desided today to try something new ans interesting. We all really liked it! :)

Ingredients:
-500 g minced meat
-water
-Santa Maria's taco spice-mix
-corn

-5 dl flour
-1 tsp salt
-½ tsp baking powder
-100 g margarine
-1 ½ - 2 dl boiling water


 Fry the minced meat in a pan, when it's completely fryed add a little water and the taco spice-mix. Add the corn (as much as you like) and mix it all up.

Measure up the flour, salt and baking powder in a bowl. crumble the butter into the mixture and then add the boiling water. Now work it all into a dough. If it's too sticky add some more flour.
Devide the dough into 5-6 smaller doughs. Roll them and flatten them out into circles big as a small plate. Then you put in the meat on half of the circle and fold the other half over it. Press the edges together with a fork.
Brush with egg ontop to get a nice glossy surface.
Put the empanadas in the oven for 20 min, 225 degrees (celsius).




I give this recipe 4/5 stars!

It was a very easy and quick dish to make, and it was very tasty. It could have been a little creamier but the taco spices and corn combied very nice. A fast and easy dish!

Italian biscotti

Ingredients:
100-150 g almonds
2 eggs
2 dl sugar
2 tsp vanilla sugar
½ pinch salt
finely grated peel of 1 orange
4 dl flour
1 tsp baking powder

 (if you don't like oranges, you can always use cocoa, saffron or make them original with only the vanilla sugar)




 
Turn on the oven on 175 degrees (celsius)
Put the almonds on a baking tray and roast them in the oven for 5 min. Let them cool of afterwards.

Mix the almonds, egg, sugar, vanilla sugar, salt and the orange peel in a bowl. Sift the flour and baking powder into the mix. Work it into a dough.
Put the dough on a floured surface and cut it into two pieces. Roll out the dough into two long "breads".
Put them on the baking tray and bake them in the center of the oven for 25 min.

Take out the tray from the oven and lower the heat to 120 degrees (celsius).
Cut the breads into 1 cm thick slices/bits.
Put the slices on the tray again so that the cut surface is upp  and put them in  the oven until they're completely dry, approximately 35 min.

Let them cool of on a rack and store them in a tightly seal jar to keep them fresh.





I give this recipe 5 stars!
It was very good and crispy. I personally love the taste of the oranges, and it was very simple to make and didn’t take that long. A great snack!
